Comparison of biopreservatives obtained from a starter culture of Pediococcus acidilactici by different techniques

Due to the increase by consumers of healthy products, exploration natural antimicrobial compounds has been promoted through use by-products lactic acid bacteria. Therefore, aim this research was obtain an powder (cell free) freeze-drying (FD) and spray-drying (SD) from microbial stabilisation (filtration or partial purification) a Pediococcus acidilactici fermentation broths. The activity these powders quantified, in vitro, against Listeria innocua CECT 4032 as target microorganism. physicochemical properties tested on were water content, hygroscopicity, activity, porosity, colour solubility. As results, microbiological is potentially better perform purification since capacity L. higher than with filtration. On other hand, SD best technique powder, it obtains productivity lower cost also more stable during storage.
